Some of you have asked if the Pipka Almond Cake, which has over 40 variations using just the one recipe, could be made into a Gingerbread cake. I thought, “Why not?”, and got busy in the kitchen. It’s the perfect time of year for gingerbread but could I make it from the original Almond Cake recipe? Yes. I had to make a couple of substitutions and add lots of spices and after I was done, the finished Gingerbread Almond Cake turned out to be a very special Christmas cake! Here’s the recipe:
